Pear & Fig Bread Pudding

Pear & Fig Bread Pudding
Gluten, Soy & Dairy Free

6 slices Gluten Free Bread
1/2 cup chopped Figs
1/2 cup chopped fresh Pears (I love Comice)
4 organic Eggs, beaten well
2 cups Rice Milk
3 tb Cognac
3/4 cup White Sugar
1 ts ground Cinnamon
1 ts Vanilla extract (pure..Gluten Free)


Preheat oven to 350F

Break bread into small pieces into an 8 inch (sprayed) square baking pan. Add chopped figs & pears.

In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla & cognac. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.

Bake in 45 minutes, or until the top springs back when lightly tapped.


Serves 6.
